Lamb Paste and Rub

Serves: Enough for a 6lb lamb shoulder
- 2 tablespoons dried rosemary leaves
- 1 tablespoon whole mustard seeds
- 1 tablespoon ground black pepper
- 1 tablespoon paprika
- 1 teaspoon ground bay leaves (I used fresh bay leaves and had an abortive attempt to ground them up in a pestle and mortar - not recommended)
- 10 cloves of garlic, peeled and pressed, or minced
- 6 tablespoons water
- Combine all the dry ingredients in a suitable bowl
- Peel and crush the garlic cloves and add to the bowl
- Add the water to make a paste
