Lamb Paste and Rub

Serves: Enough for a 6lb lamb shoulder
 
Ingredients
  • 2 tablespoons dried rosemary leaves
  • 1 tablespoon whole mustard seeds
  • 1 tablespoon ground black pepper
  • 1 tablespoon paprika
  • 1 teaspoon ground bay leaves (I used fresh bay leaves and had an abortive attempt to ground them up in a pestle and mortar - not recommended)
  • 10 cloves of garlic, peeled and pressed, or minced
  • 6 tablespoons water
Instructions
  1. Combine all the dry ingredients in a suitable bowl
  2. Peel and crush the garlic cloves and add to the bowl
  3. Add the water to make a paste
