Santa Maria-style rub for Tri-tip

Serves: about ¼ cup (enough for 1 2lb tri-tip)
- 1 tablespoon ground black pepper
- 1 tablespoon garlic powder (not garlic salt since it has been dry-brined already)
- ½ tablespoon paprika
- 1 teaspoon ancho chili powder
- Put everything in a bowl and mix together.
