Santa Maria-style rub for Tri-tip

Ingredients
  • 1 tablespoon ground black pepper
  • 1 tablespoon garlic powder (not garlic salt since it has been dry-brined already)
  • ½ tablespoon paprika
  • 1 teaspoon ancho chili powder
Instructions
  1. Put everything in a bowl and mix together.
